Cava Summit is a full-day event consisting of a tasting seminar led by François Chartier, an open tasting and a panel discussion of industry experts representing the different tiers of distribution as well as producers, represented by the DO and media.
Spain’s number one sparkling wine is not only about bubbles – it is a time-aged, quality driven wine made in the Traditional Method. Regulatory changes such as the segmentation and zonification project, organic viticultural practices and development of new Premium Cava categories are some of the steps the region and its producers are doing to inspire new perceptions about the quality of this world class wine. At the Cava Summit 2020 in New York City, we will debate and communicate the way in which US trade and media, together with D.O. Cava, can contribute to influence the way we drink and appreciate Cava.

About François Chartier, "Créateur d’harmonies"
Canadian François Chartier, who currently lives in Barcelona, is regarded internationally as one of the pioneering researchers in aromatic recipes and "molecular harmonies", a discipline he created in 2002. The world-renowned critic Robert M. Parker Jr. says that Chartier is "pure genius" while Ferran Adrià considers him to be "the number one expert on flavours". He is the author, among other works, of Taste Buds and Molecules, the best cookbook in the world according to the 2010 Gourmand World Cookbook Award. Since 2018 he has been an honorary member of the Sony Tokyo research team, collaborating with their artificial intelligence and gastronomy project.
