Produced mainly from the Catalan region of Penedès, Cava is Spain’s answer to Champagne. All Cava is produced using the “traditional method,” and it comes in a broad range of styles and uses mainly native grape varieties like Macabeu, Xarel.lo and Parellada. However, some producers are dipping their toes deeply into Champagne territory, mixing those grapes with Chardonnay, like in the Pere Ventura 2012 Gran Reserva Brut Sparkling ($62) –it is toasty and apple-y, mixing native Xarel.lo grapes with Chardonnay for an elegant finish. The pretty bottle makes it great for a gift.
